Amaretto Bread Pudding

Well it's that time again - Tailgate time. This week M decided he was dying to have more chicken wings to eat during the game on Saturday (Bama vs. Tennessee - ROLL TIDE!). You know me I can't pass up wings. So I figured instead of a repeat on the wings - I'd give you a recipe I found online that sounds absolutely delicious to me! I love, love, LOVE Amaretto liquor (anything that's flavored in almond is OK in my book!). And I have always loved my mother's bread pudding. So for me this is WIN WIN - and I will be making it soon! (If I do I will post pictures). M does not like pudding, or jello or anything as he says that "wiggles" - he has a few other issues with certain foods but we don't need to focus on that (he also hates eggs, yes giggle factor and sunny side up eggs gross him out, and yet they are my favorite!). So here you go - a tasty half time sweet treat for all of you! Happy Tailgating! And as always, ROLL TIDE and GO STEELERS!
BREAD PUDDING
1 10 oz loaf stale French bread, crumbled (or 6-8 cups any type bread)
2 cups heavy cream
2 cups Amaretto
2 cups sugar
8 tsp. butter, melted
3 eggs
2 tsp. vanilla
3 cups toasted slivered almonds
2 cups heavy cream
1 tsp. each cinnamon and nutmeg

Combine all ingredients; mixture should be very moist but not soupy. Pour into buttered 9x12" or larger baking dish. Place into non-preheated over. Bake at 350 degrees for approximately 1 hour 15 minutes, until top is golden brown. Served warm with sauce.

AMARETTO SAUCE
8 tsp. butter
1 1/2 cups powdered sugar
2 egg yolks
1/2 cup Amaretto (to taste)
*** You could also substitute the Amaretto with some Almond Extract ***

Cream butter and sugar over medium heat until all butter is absorbed. Remove from heat and blend in egg yolk. Pour in Amaretto gradually to your own taste, stirring constantly. Sauce will thicken as it cools. Serve warm over warm bread pudding.

Yield 16-20 servings..

This sounds delish BTW. ROLL TIDE!!! (I've never been into college ball, so I'm following your lead on this one! I've actually been rooting for the lately!)

Lisa I can ONLY imagine it sounds so good though! YAY L, you're rolling with the Tide. The team is pretty darn amazing they went undefeated last year until facing off with Florida at the Championship. Seriously they were almost all FRESHMEN!!! This year they are doing well, still undefeated and I think we will totally give Tim Tebow and his boys @ Florida a run for their money if we meet them at the Championship again! ROLL TIDE!!!

I have never been to a college game either - again on my list of things to do. I wanna head to see them next year at a home game!

Oh yeah - and yes L, he hates eggs. Can't stand the sight of them. He will eat things made with eggs (quiche, french toast etc - if it's made into something or baked he will eat them but not say for breakfast or whatever). He hates wiggle/giggle things and stuff he can't "chew" ex. pudding.
